打卤面

[主要原料]

 

 

 

[做法]

 

1。将猪或鸡肉切成薄片,用少许酒、盐、淀粉拌匀待用;

 

2。水或鸡汤烧开后,将黄花、木耳、香菇倒入,加酱油、盐、少许糖(可不放)煮一会儿,将肉片倒入并拨拉散开,肉片很快被烫熟,加入淀粉浆勾成浓芡(边加边搅和)再甩入鸡蛋液即可

 

3。我用的是在中国店买的干挂面(中粗的)。挂面煮好后捞出来放在大碗里(尽量控去水份),浇上卤,拌匀就可以吃了。

 

 

这种卤:汁稠、色浓、味重,是典型的北方风味打卤面。
