银鱼炒蛋

原料]

银鱼 100 克,鸡蛋 5 个,葱末 5 克,绍酒 10 克,味精 1.5 克,精盐 3 克,猪油 100 克。


[做法]
 
1
。银鱼洗净,入沸水锅汆一下,沥去水;鸡蛋磕入碗内,加入盐、味精、酒( 5 克)打匀。

。旺火热锅,滑锅后下猪油烧热,把银鱼、葱末加入蛋液中调匀,倒入锅中推炒(中途加油),待蛋液凝固嫩熟,烹入酒,再浇点油,颠翻一下,即可出锅。
