京酱肉丝

“妈妈,我想吃那个肉丝。。。酱。。。了!”女儿又点菜了!当妈的一听就知道女儿想吃“京酱肉丝”啦!

这是一道做起来很简单但很下饭的京式家常菜,说干就干。

猪肉丝、甜面酱、葱丝

[做法]

1.将猪肉切成丝,放入碗内,加姜丝和适合量葡萄酒或料酒、淀粉拌匀,

2.将葱切成丝放在盘底。姜切片略拍,取葱丝同放一碗内,加清水,泡成葱、姜水,

3.炒锅加油,烧热后将肉丝放入翻炒,并倒入适量葱姜水炒至八九成熟,

4.加入适量甜面酱与肉丝一同翻炒,根据自己的口味,加适量盐,味精、白糖,不停地翻炒,直到酱汁均匀裹住肉丝即可。

5.将炒好的肉丝倒在葱丝上,食时将肉丝葱丝拌匀即可。

炒好的京酱肉丝可以用春饼、家常饼来卷起来吃,和吃烤鸭有相似的味道。另外可以用豆皮儿卷着吃(不过我这里没有豆皮儿卖的),还可以就着米饭或馒头吃!总之,你想怎么吃都行。像我,就喜欢不就任何东西白嘴儿吃!

不同品牌的甜面酱口味可能不同。我试过后觉得台湾出的“四川天府牌”甜面酱味道最适合我的口味:不是特咸、比较甜、比较细腻。用它来蘸烤鸭,或炒酱爆的菜都非常不错!
