醉腰花


总是想吃爆腰花,总是做不好.这次看见很新鲜的腰子,就又买了来.网上搜搜,看见有比较清爽的做法,也不起油锅,就学了来.味道相当的不错.

材料:猪腰子三只,绍酒2匙,生抽2匙,醋少许,鸡精少许,蚝油1/2匙,葱花少许,蒜泥适量,胡椒粉少许,麻油少许.

1:猪腰清理干净,切除内部的白色和深红色组织.见附图A.

2:把一个腰子对半切开后再一分为二,每片改刀切成象梳子一样的形状.见附图B.

3:把处理好的腰花入滚水汆烫至熟,立刻捞出投入冰水中冷却.这样腰花才会脆嫩.我是头天先把饮用水放冰箱冷藏.见附图C.

4:将所有调味料混合均匀,成醉汁.见附图D.

5:滚水中加一点点盐和油,把青菜汆烫至熟备用.

6:腰花装盘,边上围青菜.浇上醉汁即可.

口感独特,入口脆嫩.

如果提前制作,腰花遇咸味会出一点水,倒掉那些清水就可以,并不影响口味,但腰花会比较瓷实.
