菌菇烩牛肉

蘑菇用清水洗干净,切成薄片。牛肉我用的是荷兰的小牛肉(dutch veal),价格不菲。牛肉切薄片,用水淀粉还有一点料酒腌渍一会(小牛肉本身十分细嫩,就不需要嫩肉粉的帮助了,不然就会暴殄天物了),泡嫩油,把牛肉滑成7成熟时取出沥干。锅里留底油烧热,放入葱丝,姜片,蒜片还有红辣椒爆香,加入少量黑胡椒,紧接着放进菌菇片爆炒。稍微炒一下就立即加入牛肉,放入盐,蚝油,香醋,再烹入少量清汤,烧开,加味精或者鸡精,加水淀粉勾芡,打明油即可出锅。






小牛肉的脆嫩和蘑菇的鲜香简直是无与伦比的绝配,蘑菇入口香滑,配上牛肉的清香脆嫩,让人在试过一口之后不由深深地呼吸加回味。。。
